The Healthiest Sunday Dinner

I am pretty sure that this is going to be the healthiest At His Table, that I will ever host. I invited two couples and one person was gluten intolerant. Now I could definitely do gluten free easy. There is a ton of options for that but the other person I invited had quite a longer list of allergies which include ANY type of flour (almond, oat, etc), sweeteners and cashews. So moving forward, if you would want ideas on how to host the healthiest dinner, I got you covered 😉. 

When having guests over, I would always make sure there is some type of food that is out so they can munch in when they walk in. This helps lessen the stress on you if your meal is taking longer than expected so you do not have to worry about grumbling tummies. I think I created one of the best appetizer trays yet…I’m very proud of it 😊. It was easy, healthy and came together so quick.

Hummus Platter:

  • This Hummus Recipe – is the best hummus I have made yet and I have made quite a few. Everyone thoroughly enjoyed it and at the end of the night there was about a tablespoon left.
  • Baby peppers cut in half 
  • Cucumbers (farmers market!)
  • Veggie Chips (I used Terra Chips, Mediterranean flavor)
  • Dolmas (grape leaves from Trader Joe’s)
  • Marcona Almonds (Thank you Trader Joe’s again) If you have not had these types of almonds, you must try! They are softer than regular almonds and sweeter. They are roasted in olive oil and have a sprinkle of sea salt.
  • Turkish Figs (Trader Joe’s…😊)

I also did something else that made the dinner a tad bit fun! I have been drinking water for FOREVER now and I have noticed that I have been wanting something with flavor. I love putting different fruits in my water to flavor it so I thought, how fun would it be to make a water bar?! I put out a jug of water, glasses and cute straws (see below). Then cut up lemons, lime, citrus AND I found “Apple Mint” from the Farmers market. YUM! It only takes a little extra work but I feel like this is such a fun idea for guests because I know I would love it if I was at someone’s house.

The Crustless Asparagus and Feta Quiche was made with local, in season asparagus and local eggs. I pride myself on making something in season from the Farmers Market. It just taste so much better. I made 2 of these and they came out great! It was a super simple recipe and something that can be thrown together very easily. If you are into quiche, this is a great recipe to have in your rotation. I love it and it will be a go to for an easy breakfast, lunch or dinner!

I love breakfast potatoes. I find it very rare that I would go out to eat for breakfast and not request potatoes with my meal. I found this recipe on Pinterest and it had a ton of pins so I was like okay! This recipe makes a lot of potatoes and they are seasoned nicely and quite enjoyable.

Cutting these potatoes small, makes them cook so fast. Make sure you stir these about every 10 to 15 mins to get a nice even browning.

So…I was planning on making the blackberry sausage recipe that actually is on the Quiche’s page but I could not find good quality ground pork so I settled for the “Godfather” ground sausage at Lowes Foods. If you read any of my past post, you would realize that I usually always by my sausage there. They make it in house and it is always buy one get one free! If you need sausage for your next recipe (Blackberry sausage 😉) then I suggest to stop at Lowes Foods! So, I could not make my own official sausage but what I did do was mix in about a cup of blackberries to the already created sausage. Then you make patties and put a little oil on the pan and cook on both sides until done. Blackberries makes it fun and adds another level of tastiness. My guests really enjoyed it!

Another fun thing to do when you have people over is write down some fun questions to ask and spark convo. This is such an easy way to get people to open up, LAUGH and get to know each other better. It relives pressure if you have a hard time thinking of topics to talk about and everyone will enjoy it.

I felt like I learned a lot from this dinner. The guests that were at my house were so appreciative of everything I did for them and that I invited them over. They made it seem so special for them. It is amazing that a simple invite for dinner could make a heart become so full. I also learned that a hummus platter is always a good idea and I do not think I will be serving water again without fun things to flavor it with!
